Okay people, so normally I would comment on the fact that we've gotten through one day of the week and we only have four left to go until the fabulous magic that is the weekend. However, as I mentioned last week I'm working on renewing all aspects of my life, including my attitude. As part of that I want to stop "getting through" the week to get to the weekend and start enjoying every day. If we spend every week just counting down the minutes until we're back to Friday we're missing most of our life.
With that being said I'm trying to appreciate the little pleasantries that the week brings and one of those things is definitely a good meal. I rarely cook on the weekends since we're usually out and about so the weekdays are when I get to experiment with new recipes. Tonight I'm going to try a quick one I found on Gimme Some Oven for Skinny Fettuccine Alfredo. Check out the recipe below and wish me luck!

Ingredients
Directions Cook pasta al dente according to package directions, in generously salted water. Meanwhile, heat olive oil in a large saute pan over medium-high heat. Add garlic and saute one minute, stirring occasionally, until fragrant. Sprinkle with flour, and stir to combine. Saute for an additional minute to cook the flour, stirring occasionally. Slowly add chicken broth, whisking to combine until smooth. Whisk in milk, and bring the mixture to a simmer. Let cook for an additional minute until thickened, then stir in Parmesan cheese, salt and pepper until the cheese melted. Reduce heat to medium-low until pasta reaches al dente. Drain pasta, then immediately add pasta to the saute pan with alfredo sauce. Toss to combine. Serve topped with chopped fresh parsley if desired. I plan on adding some grilled chicken breast and chopped broccoli to ours as well, let me know what you would add to your Skinny Alfredo in the comments! |
