It's Fridayyyyy everyone. It's been a very long and stressful week and happy to finally be heading into a few days of nothing but fun and relaxation. My sister and her boyfriend are coming to Brooklyn to visit and I can't wait to spend a couple of sunny afternoons sipping drinks at rooftop bars. In honor of the weekend and the first day of May here are some fruit filled, delicious looking drink recipes that I found while scoping out Pinterest. Coconut Creamsicle Margarita
Watermelon Mint Cocktail | Ingredients: 2 ounces grand marnier 2 ounces orange juice 1 1/2 ounces silver tequila 1 ounce lime juice 1 ounce coconut water 1 ounce canned light coconut milk 1 ounce simple syrup unsweetened shredded & toasted coconut for glass rims orange & lime slices for serving Directions: To rim glass, fill a plate with coconut. Rub honey or left over frosting on the rim - anything sticky that the coconut will stick too - then place on the plate to coat with coconut. Fill glass with ice. Ingredients: Watermelon Prosecco Fresh sprigs of mint Directions: Quarter the watermelon and cut out large chunks. Make sure to reserve on or two very thinly sliced pieces. You can use cookie cutters on these to make fun shapes as garnishes, like the stars on the left. To make the watermelon juice pulse chunks of melon the a blender or food processor then pour through a fine sieve to reserve the juice and take out the chunks. Add a piece of watermelon cut out to the bottom of the glass and then add watermelon juice. The more you put in the watermelony your drink will taste. Fill the rest of the glass with cold Prosecco. Grapefruit Mimosas
